Pane Di Altamura is a bread that is created from durum flour, both the bread and flour originate from the Altamura area of the Provincia di Bari in the Pulgia region of Italy. The bread was granted PDO status in 2003 within Europe. 
The Pulgia region of Italy where the bread originates has the highest biodiversity record of the whole wheat production industry in Italy.
In order for the PDO status to be granted a loaf of Pane Di Altamura must contain particular varieties of wheat and a crust of over 3mm’s in thickness. The shape of the bread is not seen as important.
